200g gooseberries
125ml double cream
125ml of diluted elderflower cordial (make your own using this recipe)
1 tablespoon of honey
Methods/steps
- Top and tail the fruit.
- Stew in the cordial and honey, and reduce until the mixture is the consistency of jam.
- Whip the cream until stiff.
- When the fruit is cool, fold in the whipped cream.
- Serve and enjoy!
