Gooseberry fool

Description

A delicious and easy recipe for a dessert that tastes of summertime!

Ingredients

200g gooseberries

125ml double cream

125ml of diluted elderflower cordial (make your own using this recipe)

1 tablespoon of honey

Methods/steps

  1. Top and tail the fruit.
  2. Stew in the cordial and honey, and reduce until the mixture is the consistency of jam.
  3. Whip the cream until stiff.
  4. When the fruit is cool, fold in the whipped cream.
  5. Serve and enjoy!
