French Bean Salad

Description

A simple salad of French beans with vinaigrette.

Ingredients

500ml water

Salt

450g/1 lb French beans (either fresh of frozen)

1 tablespoon wine vinegar

3-4 tablespoons olive oil

1 large garlic clove, crushed or finely chopped

Salt and black pepper

Methods/steps

  1. Bring the water to the boil in a saucepan and add a pinch of salt.
  2. If using fresh beans cut the tips off both ends, and wash in cold water.
  3. When the water is boiling tip in the beans, cover the pan and cook until tender – about 7-10 minutes.
  4. Meanwhile, mix the oil, vinegar, chopped or crushed garlic and seasoning in a salad bowl.
  5. As soon as the beans are cooked drain them and add to the dressing while still hot.
  6. Stir well to combine all the ingredients.

Additional Tips

Allow the beans to cool down and serve as a side dish or as part of a cold buffet.
