Cherry Clafoutis

Description

Clafoutis is a French dessert made with black cherries baked in batter.

500g/1lb black cherries

2 tablespoons kirsch or brandy (optional)

3 eggs

50g/2 oz caster sugar

75g/3 oz flour

Pinch of salt

300ml/ ½ pint milk

50g / 2oz butter

Methods/steps

  1. Preheat oven to 220°C, 425°F, Gas 7.
  2. Butter a medium ovenproof dish.
  3. Remove the stones from the cherries and set aside. If you are using kirsch or brandy soak the cherries in it for at least an hour.
  4. Beat the eggs together with the sugar until well mixed.
  5. Sift the flour and salt and fold them into the egg mixture.
  6. Melt the butter and add it together with the milk, to the mixture to make a batter
  7. Pour a thin layer of the batter into the buttered dish and bake for 5 minutes, or until just set, then remove from the oven.
  8. Distribute the cherries evenly over the cooked batter and pour the remaining batter over the top.
  9. Dot with the remaining butter.
  10. Return to the oven and bake for 40 – 45 minutes until the top is set and golden brown.

Additional Tips

Sprinkle generously with icing sugar and serve warm.
