Cherry Clafoutis

500g/1lb black cherries
2 tablespoons kirsch or brandy (optional)
3 eggs
50g/2 oz caster sugar
75g/3 oz flour
Pinch of salt
300ml/ ½ pint milk
50g / 2oz butter
Methods/steps
- Preheat oven to 220°C, 425°F, Gas 7.
- Butter a medium ovenproof dish.
- Remove the stones from the cherries and set aside. If you are using kirsch or brandy soak the cherries in it for at least an hour.
- Beat the eggs together with the sugar until well mixed.
- Sift the flour and salt and fold them into the egg mixture.
- Melt the butter and add it together with the milk, to the mixture to make a batter
- Pour a thin layer of the batter into the buttered dish and bake for 5 minutes, or until just set, then remove from the oven.
- Distribute the cherries evenly over the cooked batter and pour the remaining batter over the top.
- Dot with the remaining butter.
- Return to the oven and bake for 40 – 45 minutes until the top is set and golden brown.




Additional Tips
Sprinkle generously with icing sugar and serve warm.
