500g (1lb) of squid rings

Juice of1 lemon

Dash of olive oil

50g (2oz) of plain flour

2 eggs

salt

Oil for frying

1 lemon cut into 4 wedges

Garlic mayonnaise (optional)

Methods/steps

Put the squid rings in a bowl and cover with lemon juice and olive oil.

Leave to marinate for 30 minutes

 

Put the flour on a deep plate and mix in the salt.

Beat the eggs in a separate bowl.

Drain the squid rings well and coat in flour and then in egg.

 

Heat the oil in a frying pan until hot but not smoking.

Place the squid in the hot oil and fry until golden, turning over if necessary. This should take less then 5 minutes

Be careful not to overcook the squid as this will make it tough.

Remove from the pan and place on kitchen towel to absorb the excess oil.

 

Serve with a lemon wedge and garlic mayonnaise
