Aloo Matar

Description

An Indian curry made with peas, potatoes, tomatoes and spices.

2 -3 tablespoons vegetable oil

1 teaspoon cumin seeds

5 tomatoes cut into pieces.

2 green or red chillies finely chopped (Use more or less chillies to adjust the heat to your taste)

2 potatoes cut into pieces.

A pinch of chilli powder.

2 teaspoons ground coriander.

Salt to taste

300-400g frozen peas (about half of a normal bag, or use fresh ones from your garden!)

A handful of fresh coriander finely chopped.

1 teaspoon garam masala

Methods/steps

  1. Heat the oil in a saucepan until quite hot and add the cumin seeds. Fry until slightly coloured. (Be careful not to burn them as this can happen very quickly)
  2. Add the tomato pieces and chillies and fry until the tomatoes are soft.
  3. Add potatoes, chilli, coriander and salt to saucepan, stir well and cover with a lid.
  4. Cook for about 10 minutes stirring every now and then.
  5. Add peas and coriander to the pan, mix well and cook until peas and potatoes are soft.
  6. Add garam masala and stir well.

Additional Tips

Serve with rice or nan bread.
